Chocolate Raspberry Bars

These are some seriously yummy bars. Do not make them if it’s going to be you only because you will eat all of them. I started taking this picture with two bars, ahem. I made them for the women’s group that met at my house this week.

Chocolate Raspberry Bars

1 c. all-purpose flour

1/4 c. powdered sugar

1/2 c. butter

Filling:

1/2 c. seedless raspberry jam

4 oz. cream cheese, softened

2 Tbsp. milk

1 c. (6 oz.) white chocolate chips, melted

Glaze:

3/4 c. semi-sweet chocolate chips

2 Tbsp. shortening

In a bowl, combine flour and powdered sugar; cut in butter until crumbly. Press into an ungreased 9” square baking pan. Bake at 375o for 15-18 minutes or until slightly browned. Spread jam over warm crust. In a small mixing bowl, beat cream cheese and milk until smooth. Add melted vanilla chips; beat until smooth. Spread carefully over jam layer. Cool completely. Chill until set, about 1 hour. For glaze, melt chocolate chips and shortening together, stir to combine; spread over filling. Chill for 10 minutes. Cut into bars, then chill another hour. Store in the fridge. Yields about 3 dozen
