Chocolate Peanut Butter Scones

Have you been getting bored of the cinnamon scones? Really, who could get bored of scones? Regardless, here is the one I made for Jacqui. You might like to try it.

Chocolate Peanut Butter Scones

  • 1 2/3 c. all purpose flour
  • 1/3 c. cocoa powder
  • 1/3 c. sugar
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 tsp. instant coffee
  • 1/3 c. peanut butter chips
  • 1/3 c. chilled butter
  • 1 egg
  • 1/2 c. heavy cream
  • 1 tsp. vanilla

Preheat oven to 400o. Line a baking sheet with parchment paper.

In a large bowl, combine flour, cocoa powder, sugar, powder, salt and instant coffee. Cut in butter with a pastry blender or your fingertips (if you’re on vacation and there is no pastry blender in your condo) into coarse crumbs. Add peanut butter chips.

Combine cream, egg and vanilla (or vanilla creamer or not at all) in a measuring cup until egg is beaten. Add to dry ingredients and stir to combine, but don’t over stir. Dump onto counter and slightly knead to form into a ball. Carefully pat and push the dough into an approximate 7” circle and cut into 8 wedges. Transfer wedges to baking sheet. Bake for about 15 minutes.

Fan the door of your friend’s bedroom back and forth so that the smell wafts in until she wakes up. Devour chocolate for breakfast!!
